Producers - Spirit of Yorkshire distillery
The Spirit of Yorkshire distillery is well on its way to making Yorkshire's first single malt whisky. Although the spirit distilled is maturing well, it can't be called whisky until it is three years old. So, as a trailer, Spirit of Yorkshire is releasing a series of maturing malts finished in sherry casks. If the first release is anything to go by, the second for release in Spring 2018 will bne sought after and sell-out quicker than the 2,000 bottle first release.
The Spirit of Yorkshire distillery is located in Hunmanby, very close to the farm where the barley is grown and malted. The wash (we call it a Wold Top beer without hops) that forms the initial liquor from which with water from the borehole feeding Wold Top brewery ensures that Spirit of Yorkshire's distillery has very few road miles when compared with most whisky from Scotland. Indeed many of the famous names in Scotch use malting barley from the Yorkshire Wolds.
Tom Mellor, who with his wife Gill established Wold Top Brewery, the distillery is very much Tom's preserve and that of his business partner David Thompson. Informative distillery tours are available and a great introduction to what will be Yorkshire flagship whisky. The distillery is also hosting Birds on the Loose duo Sue nelson and Gilly Robinson for pot still pop-up dinners in April and October 2018.
