The Yorkshire Fine Cheese Company, home to Barncliffe Brie, is run by Danny and Carole Lockwood who share a passion for making really great soft cheese. Their desire to produce a soft cheese unique to its surroundings and using the finest locally sourced milk is the ethos of this small but expert cheese company.
As in times past milk is collected daily from the farm and taken just a short distance into the tranquil valley below the farm to the dairy facility at Barncliffe Mill. The ingredients are hand-stirred into the milk and when the time is right the curd is cut. It is then poured into individual moulds to form the hand-made cheeses. Indeed, Barncliffe brie has won a World Chesse Awards gold medal.
Barncliffe Brie is a soft mould-ripened cheese which develops its distinctive white coat whilst ripening in a special temperature and humidity controlled room with a filtered fresh air system to imitate the conditions found in cheese cellars in times past. It has a smooth texture with a rich golden centre and unique flavour. Truly a great Yorkshire cheese.
